post workout pizza....

post workout pizza
2 servings
1 tomato (i used a roma)
pinch dried oregano
pinch dried basil
pinch ground black pepper
2 slices ezekiel bread
6 oz. leftover grilled chicken or turkey breast (i used leftover balsamic chicken)
2/3 cup low fat cottage cheese
2 tbsp grated parmesan or asiago cheese
cut tomato into slices, season with oregano, basil and pepper. put 2-3 slices of tomato on each slice of bread.
cut chicken or turkey into thin slices and place on tomatoes.
divide cottage cheese evenly and top chicken or turkey. sprinkle with cheese.
bake in toaster oven at 400 for about 20 minutes or until top becomes slightly golden brown.
*i don't have a toaster oven so i broiled it in my oven
*i also cut the recipe in half when i made it
per serving: 285 calories; carbs. 15g; fiber 2g; sugars 4g; protein 31g; iron 2mg.
