i have made these frittatas a couple of times, they are a good mix of fat, protein and carbs. ham, being high in sodium, wouldn't be my first choice of meat, but 1/2 cup of ham divided into 12 muffin cups really isn't enough to worry about. try them for breakfast, it is important to fuel our bodies with good food in the morning!
ham & cheese frittatas
12 servings
1 1/2 cups diced red potato
2 tb butter
2 tb olive oil
8 eggs
1/2 cup milk
1/2 cup ham, diced
1/2 cup mushrooms, diced
3/4 cup grated cheese
salt & pepper
1. preheat oven to 375
2. in a medium skillet, over medium high-heat, combine oil and butter.
3. add potatoes and season with salt and pepper. saute until potatoes are golden brown and tender, about 12-15 minutes.
4. spray a muffin tin with nonstick cooking spray (i used paper muffin liners-the foil ones might be better).
5. in a large bowl, whisk together eggs and milk.
6. stir in ham, mushrooms and cheese. season to taste with salt and pepper.
7. in the bottom of each muffin tin place a small spoonful of potatoes to cover the bottom of the tin.
8. top potatoes with egg mixture, filling cups almost to the top.
9. bake for 8-10 minutes, until cooked through (mine took about 15 minutes).
* I topped mine with salsa.
