taco tuesday (except it's sunday)....

i got this recipe in the mail a few days ago from kroger.
tried it and the tacos were a hit!
my advice:
the first time always try the recipe exactly as written!
i used all the kroger items as listed.
i used brown rice....you will find it by the frozen vegetables.
the rotisserie chicken was the $4.99 size.
this would also make a dee-lish taco salad.

savory chicken tacos

1 kroger home savory slow roasted rotisserie chicken, deboned and shredded
1 pkg. (12 oz) kroger frozen steamable white or brown rice
1 c. shredded kroger mexican cheese
1 can kroger diced salsa-style fire roasted tomatoes
1/2 t. salt
1 c. kroger frozen sweet corn
1 jar (16 oz.) kroger verde enchilada sauce
1 pkg. crisp taco shells or soft tortillas
sour cream

Preheat oven to 450. Spray 13x9 pan with cooking spray.

Mix all ingredients except taco shells and sour cream into a large bowl. Spread evenly into baking dish.

Bake at 450 for 20 minutes or until bubbling. Let stand 5 minutes.

Spoon into taco shells and serve with sour cream

whatever that is....

is it easier for you to see your flaws and faults than to acknowledge your strengths? you are not alone. here are five things you can do to ditch the disparaging thoughts and to celebrate what's good about you!


1. accept compliments
if you find it difficult to identify your strengths, start listening to and accepting positive feedback from others and let it 'sink in.' it's often easier for others to see your strengths than to see them yourself. notice themes in the compliments that others give you. for example, do others comment on the calm way you handle your children's emotional outbursts, or the warmth you exude when talking with others? listen to the positive things that others are telling you and consider the possibility that they are true.


2. confidence is not pride
many women fear that owning their strengths will lead to becoming prideful or conceited. pride is putting self above others, confidence is self equal to others. confidence allows you to genuinely feel good about yourself and present your best self while generously acknowledging the wonderful and unique characteristics of others.


3. recognize your worth
every person has intrinsic value. your worth doesn't go up or down based on your good or bad performance or characteristics. 'a person's worth is contingent upon who he is, not upon what he does, or how much he has. the worth of a person, or a thing, or an idea, is in being, not in doing, not in having.' alice mary hilton


4. replace 'or' with 'and'
often recognizing your limitations can lead you to discount your strengths, as if you have to choose one or the other. having limitations doesn't negate your strengths. people aren't strong or weak, good or bad-you are both. recognize that everyone has strengths and limitations. allow yourself to acknowledge your limits and your strengths.


5. challenge your inner critic
the majority of internal self-talk is negative. become more aware of the negative messages you tell yourself and challenge those negative thoughts. ask yourself, 'if i said that to a loved one, how would they feel?' it can also be helpful to identify the origin of your negative messages and discover that the critic isn't really your voice, but an internalized message that you've received from someone else. try replacing, or at least balancing, the criticism with positive thoughts that acknowledge your unique personal strengths, gifts and talents.

happy valentines day....

i have been craving some good fruit, so i stopped at costco on the way home from my workout. i was so excited to get it all cut up.

my nutrition has been off a little the past two weeks, a couple jazz games, the super bowl and miami are to blame!

I am back on track....

gettin' jiggy wit it....

picking up our bibs at the miami marathon expo last weekend
bright and early sunday morning.
the start line was at the american airlines arena
ashlan & i ran the full marathon
jodie & Suz ran the half marathon
runners along ocean drive in southbeach.
i really debated taking pictures along the way.
decided it would be worth sacrificing a few minutes of my time to have memories of the race.
so glad i took the time:)
what would we do without the volunteers
keeping us hydrated?
my knee had been giving me trouble in the weeks before the marathon.
i knew it wasn't going to be good when it was hurting before we even started running.
things got ugly pretty quickly.
by mile 18 i wanted to lay down on the sidewalk and cry, my knee hurt so bad!
something inside me kept my body going....
26.2 done again!
nathan & ashlan were waiting for me at the finish line.
i'm so lucky to be able to run races and have these adventures with ashlan.
everyone always asks, why miami....
here you go...
this is why
sun...sand...water...
well and the chance to run another 26.2
