why can't you be a normal mom....
here's what i made for dinner tonight
not the best picture and absolutely nothing like the picture in the magazine.
my kids wanted to know what was for dinner.
i told them it was a new recipe called
protein-packed salsa chicken.
my kids then ask why i can't be like a normal mom
and make normal things for dinner:)
(the wild rice with last night's dinner pushed them over the edge this week)
really....who defines normal?
And...just so you know
the recipe turned out fantastic!
protein-packed salsa chicken
4 boneless skinless chicken breasts (i cut mine in to thirds)
12 oz. salsa
15 oz can black beans, rinsed and drained
1 avocado, sliced
place chicken, salsa and beans into a slow cooker. cook on high for 3-3 1/2 hours.
serve with slices of avocado

i liked the recipe because it was simple and fast.
i put everything in the crock pot mid afternoon
and it was done just a couple hours later.
as it was cooking i cut my chicken up a little more.
i wasn't quite sure how to serve it or what to serve it with.
we put it in flour tortillas with the slices of avocado.
according to the recipe each serving is
270 calories (4 servings)
33 g of protein
1 g sugar
those numbers are with out the flour tortillas i used.

ReplyDeleteYum! I made the same thing.. omit the beans. because they are furry.. haha!! congrats on registering! That will be amazing! And for the record I think your completely normal.. a little crazy for running 2 halfs in two weeks but I love you all the same. :)
