shout out....

i am posting this recipe as a shout out to my running chicas!
they are running so cal ragnar this weekend.
this chicken salad recipe is what i make for the cooler in the relay races i run.
i am pretty picky about the food i eat during races.
i like to keep what i eat pretty simple.
so far...knock on wood!
i have never had any stomach issues that are pretty common in relay races.
everyone is running on no sleep and awful eating schedules.
last year during wasatch back we had some emergency gi issues in our van:)
keep it simple!
 i thought i'd put a picture of the durkee dressing bottle,
it's a little hard to find.
i bought it at fresh market in kaysville.

mimi's chicken salad
2 cups diced chicken (i use a pre cooked rotisserie chicken)
1 cup red grapes, halved
1/2 cup diced celery
1/2 cup cashews

dressing
1/2 cup light mayo
1 tablespoon durkee dressing
1 teaspoon white vinegar
1 teaspoon sugar
mix together dressing ingredients. add chicken, grapes, celery and cashews.
serve on 100 calorie sandwich thins.
